Crock Pot Dinner
Pot Roast
INGREDIENTS
1lb roast
dry dressing packets (ranch dressing, italian dressing)
dry packet brown gravy mix
carrots
potatoes
onion
salt
pepper
flour
DIRECTIONS
- Spray crock pot with non-stick spray
- cut onions into rings and place at bottom of crock pot
- Tenderize roast -- I punch mine to get out frustrations
- coat both sides of roast with salt and pepper. massage in
- coat roast in flour. place on top of onions
- cut carrots and potatoes into your desired size and put on/around roast
- mix all three dry packets with water making sure to get out clumps
- pour over roast
- cover and cook on high for 8 hours
- serve and enjoy!
Nutella Crepes
INGREDIENTS
For Batter
1c flour
2 large eggs
2Tbsp melted butter
3/4c milk
1/2c water
For Filling
1/4c Nutella
2 bananas, peeled sliced (optional)
confectioners sugar (optional)
DIRECTIONS
- Heat a 10'' nonstick pan over medium heat
- add enough butter to coat
- 2tbsp crepe batter in pan, swirl to cover pan
- cook first side for 3-4min
- flip
- spread nutella down center of crepe
- add bananas
- cook 3-4 more minutes
- fold crepe sides over filling and place on plate
- top with more bananas and confectioners sugar
- repeat to make more
INGREDIENTS
10-12 long, thin lasagna noodles
6oz Italian style chicken or turkey sausage, casings removed
1 bag frozen spinach
1/4 tsp red pepper flakes
pinch of nutmeg
salt and pepper to taste
1c ricotta cheese
2c marinara
3/4c shredded mozzarella cheese
DIRECTIONS
- boil a pot of salter water
- add noodles and cook till al dente
- drain and toss with enough oil to coat
- while noodles are cooking brown sausage in large pan over medium heat
- add spinach, pepper flakes, and nutmeg
- cook till spinach is warmed
- season with salt and pepper
- remove and let cool slightly
- combine sausage with ricotta cheese in large mixing bowl
- preheat oven to 400*
- spread thin layer of marinara at bottom of 13''x9'' baking pan
- lay noodles on cutting board and cut each in half cross wise
- place large spoonful of spinach-ricotta mixture at end of noodle
- roll in tight package, but not so tight everything is squeezing out
- place rolls in pan as you complete each one
- top with remaining marinara and cheese
- cover with foil and bake for 15min
- remove foil and bake another 10min until cheese and sauce are bubbling
INGREDIENTS
2 large russet potatoes peeled and cut into 1/4'' fries
1Tbsp olive oil
1tsp chili powder
1/4 tsp smoked paprika
salt and pepper to taste
1c shredded pepper jack cheese
4 slices of bacon cooked and crumbled
5 scallions chopped
DIRECTIONS
- preheat oven to 425*
- toss potatoes with olive oil, chili powder, paprika, salt, and pepper
- spread out on a rimmed baking sheet
- bake for 20min until deep brown and crispy
- top with cheese, bacon, and scallions
- return to oven
- bake until cheese is melted and beginning to brown
with sweet potato and chicken sausage
INGREDIENT
2 medium sweet potatoes, peeled and cut into 1/4'' cubes
1/2Tbsp olive oil
2 links uncooked chicken sausage
1 medium yellow onion, chopped
1/8tsp cayenne pepper
salt and pepper to taste
4 eggs, fried sunny side up
DIRECTIONS
- place potatoes in medium saucepan and cover with water
- bring to boil and cook until fork tender
- drain
- heat the oil in large cast iron or nonstick skillet over medium heat
- cut the sausage out of casing and squeeze meat directly onto pan
- throw away casing
- saute for 4-5min
- transfer to plate
- in same pan add the sweet potatoes and onion
- cook until potatoes and onions are browned
- return sausage to pan
- season with cayenne pepper, salt, pepper, and stir to mix
- divide among plates and top with fried egg
INGREDIENTS
1c peanut butter
1c sugar
1 egg
DIRECTIONS
- mix all ingredients in bowl
- form dough into balls
- flatten with sugar coated fork (dip fork in water then sugar)
- bake at 350* for 13min
INGREDIENTS
6 hard boiled eggs
mayonnaise
salt
paprika
mustard
DIRECTIONS
- cut each egg in half, remove yolk
- place whites of egg on plate
- in bowl mix yolk, mayonnaise, mustard, salt, pepper, paprika (i don't measure i go by taste)
- mix until yolks are as smooth as you like
- fill whites with yolk mixture
- sprinkle paprika on top
- enjoy
INGREDIENTS
1c peanut butter
1/2c margarine
2 packages chocolate chips (milk chocolate or semi sweet)
1tsp vanilla
1 package mini marshmallows (colored or white)
DIRECTIONS
- Melt first three ingredients in sauce pan on stove top
- when melted add vanilla and marshmallows, mix well
- place in buttered 9x9 or 9x13
- place in fridge to cool and set
- cut into desired sizes and enjoy
INGREDIENTS
2c Sugar
1 stick butter
1/2c milk
1tsp vanilla
2c oatmeal
1/2c peanut butter
DIRECTIONS
- Mix sugar, milk and butter in sauce pan, bring to boil for three minutes
- remove from heat
- Add vanilla and peanut butter, stir well
- add oatmeal a little at a time
- drop by spoonfuls onto wax paper, or pour into buttered pan
- put in fridge till cool
- enjoy
Those bacon cheese fries sure look yummy!!! and there is never not a good time for bacon : )

They are really really good. I made them about a year ago. Half the bacon never made it to my fries though :)
